Scott honed his early training from South Australia at the most rigorous Michelin-starred kitchens in London in the 1990s before moving to Melbourne. And it shows! Scott combines exemplary classic technique and European hospitality with a love of local and seasonal ingredients in his own uniquely Australian way every day in his restaurants. His secret? Buying the best ingredients and being guided by his eight principles of flavour.
Marriages of Flavour is an exciting new cook book (August release) that outlines his principles of flavour in the context of some his signature (but very achievable) dishes. Its a book that will inspire, teach, illuminate, delight and feed you. Much like a masterclass with Scott (minus the swearing), each recipe will lead you to being a more creative and naturally responsive cook.
